A lot of what you say about Support was what I expected to find in residency. Based on what you have written about your GF, my opinion is that you should cut your losses and move on. The scriptures say that one of the main reasons good people don't join the church is because they just haven't been introduced to it. But I loved this girl more than anything in life. I know a non-Mormon guy who married a Mormon woman and has kept her beautiful and desirable, by encouraging her religious involvement, even though he avoided Mormonism himself. To embrace each others needs and interests, it seems I am destined to long for this connection into eternity. Long story short, everyone is dead on. My wife told me she does not want to know if the church is false, so I don't pressure her. The church is very important to her. Either way, if you have kids and you don't convert, she will divorce you and take your kids away from you and you will be shunned from her community. If it is a good honest relationship with two well-meaning people, you need to put work into it. My husband is on call today, gone the entire weekend.
